Biotrance element selenium is essential for body. But it can be not synthesized in body, and just obtain by food. According to the principle of nutriology and biochemistry, organic selenium is better than inorganic selenium in absorbability, pharmacology and physiology, security. Inorganic selenium in the medium can be transforemated into organic selenium by edible fi.ingi, such as Ganoderma Lucidu.m, Flammu]ina velutipes, Len tinu]a edodes and Hericiuin erinaceus , buttheyhave different selenium accumulation and biotransformation ability. The selenium biotransformation rate of Ganoderma lucidum mycelia was the highest, 10?0 times higher than that of other three edible fungi ,and that the content of organic selenium in the mycelia of Ganoderma lucidum was up to 8000ug/g. Ganoderma lucidum is a kind of medicinal mushroom in China, If taking regularly for long periods of times, it would enhance immunity and anti-aging. So it was used as vector of selenium biotransformation. In this study, the effect of biotransformation factors related in Ganoderma lucidum rich in selenium on selenium biotransformation of Ganoderma lucidum were studied. These factors included temperature, rotational speed, p1-I, acclimated seed mycelia, UV ray, inoculation amount and carbon sources, nitrogen sources, inorganic salts. The fermented medium rich in selenium of Ganoderma lucidum was studied by orthogonal design L27(3 13). The optimum medium was of 30% potato, 4% glucose, 0.5%peptone, 0.1 %KH2PO4 and 0.2% MgSO4 The effect of selenium on growth and metabolism in Ganoderma lucidum was studied. Selenium in concentration 400 ii g/g had no significantly adverse effect on growth and metabolism of mycelia., but the content of dissoluble protein, polysaccharide and Cu,Mn,Ca,Fe increased 7 compared with CK group. Selenium increased activities of some esterase, peroxidase isozyme and SOD isozyme, but didn?t change their structure. These observations suggested that it was a good way that producing Ganoderma lucidum foods containing organic selenium by fermentation as health foods. Polysaccharide containing selenium is organic compound that act as not only selenium but also polysaccharide. Now the molecular structure of polysaccharide containing selenium and mechanism that selenium get into polysaccharide have not been reported. In this study, the polysaccharide containing selenium of Ganoderma lucidum isolated and purified from fermented mycelia of Ganoderma lucidum rich in selenium was analysed by infrared absorption spectra etc., the molecular structure of polysaccharide containing selenium and mechanism that selenium get into polysaccharide were studied. The results showed that the structure of activity centers of selenium of SeGLP-l was OSeO, and CH3 in - CH3 group was substituted by selenium forming this structrue.SeGLP-1 can distinctly inhibit the growth of cancer cell, and anti-tumor ratio was 80.3%. The Nutritional Components and the effects on antioxidation of Ganoderma lucidum Rich in Selenium were studied. The reseals showed that GSH-px and SOD activities of the blood in rats fed Ga.nodenna Lucidum accumulated Se were increased significantly, MDA content were decreased sharply. The antioxidation effects were better than Ganoderma Lucidum and Na2SeO3.
