Ganoderma lucidum is a kind of edible and medicinal fungi. Ganoderma lucidum with a variety of important pharmacological activities, such as anti-inflammatory, immunemodulatory, anti-tumor, liver, lowering blood sugar and blood pressure, and so on,havea a good prospect of application.This article is about Ganoderma lucidum water-soluble protein and Ganoderma lucidum alkali-soluble polysaccharide extraction process optimization, Ganoderma lucidum water-soluble protein and Ganoderma lucidum alkali-soluble polysaccharide anti-oxidation, and development of Ganoderma lucidum pulp. The results are follows:1. Ganoderma lucidum water-soluble protein extract of the optimization processIn the experiments of developing the extraction program of water-soluble protein from Ganoderma lucidum, the effects of extraction time, extraction temperature, pH, solvent-material ratio on extraction program were studied. Respone surface methodology was further taken based on the single factor experiments. The mathematic model was built between the respone, total water-soluble protein yield and four factors. The optimal condition was as follows: extraction temperature 26.56℃,extraction time 8.87h, pH 8.89 and solvent-material ratio 34.42mL/g. Under this condition, the expected yield of water-soluble protein was 82.59mg/g.2. Ganoderma lucidum alkali-soluble polysaccharide extract of the optimization processIn the experiments of developing the extraction program of alkali-soluble polysaccharide from Ganoderma lucidum, the effects of extraction time, extraction temperature, NaOH concentration, solvent-material ratio on extraction program were studied. Respone surface methodology was further taken based on the single factor experiments. The mathematic model was built between the respone, total alkali-soluble polysaccharide yield and four factors. The optimal condition was as follows: extraction temperature 60℃,extraction time 2h, NaOH concentration 5% and solvent-material ratio 20mL/g. Under this condition, the expected yield of alkali-soluble polysaccharide was 19.63%.3. Ganoderma lucidum water-soluble protein and Ganoderma lucidum alkali-soluble polysaccharide anti-oxidationThree kinds of Ganoderma lucidum polysaccharide: Ganoderma lucidum to the water soluble polysaccharide, alkaline extraction of water soluble polysaccharide Ganoderma lucidum, alkaline extraction of alkali soluble polysaccharide Ganoderma lucidum and Ganoderma lucidum water-soluble protein were made two free radicals:DPPH·,·OH Experimental anti-oxidation and reducing power. The results show that three kinds of polysaccharide Ganoderma lucidum and Ganoderma lucidum water-soluble protein have chear effects of two radicals and reducing power.4. The development of Ganoderma lucidum pulpThe development of Ganoderma lucidum pulp was studied, and development of Ganoderma lucidum pulp process was obtained. The content polysaccharide and amino acids in Ganoderma lucidum pulp were determined, the results were polysaccharide872mg/100mL, amino acids157.48mg/100mL, a simple analysis of the nutritional value and medicinal value of Ganoderma lucidum pulp were studied.
