The mechanism of muscle protein denaturation of several maineconomical freshwater fishes---Oreochromis niloticus, Aristichthysnobilis and Carassius auratus during frozen storage are researched in this paper.The solubility of actomyosin, activities of Ca~2+-,Mg~2+-, Ca~2*-Mg~2+-, Mg~2+-EGTA-ATPase and SH content of myofibrillar protein are adopted to study the denaturation of myofibrillar protein of Oreochromis niloticus, Aristichthys nobilis and Carassius auratus during frozen storage at-10 ℃, -20℃, -30℃ and ~40℃, respectively. The results indicate that the solubility of actomyosin, ATPase activities and SH content of myofibrillar protein of these fishes are all decreased as frozen storage progressed. The temperature of frozen storage make significant influence on the rate of denaturation of myofibrillar protein of these fishes(P
