China is the most country of laying and consuming the eggs in the world. Eggs are rich in unsaturated fatty acid and amino acid. Eggs have higher biologic value. So eggs were intituled "absolute food" and deeply favored by consumers. The research established a fast and accurate analysis method for cholesterol from egg yolk. And the effect of the natural red yolk powder of duck's egg(NRYP) on growth and development, antifatigue, immunity, liver and serum lipid of mice and its mechanisms were discussed through the animal experiments and analytical means of molecular biology. The main results are as follows:1. Analyzing of nutritional components of the natural red yolk powder of duck's eggA fast and accurate analysis method for cholesterol from egg yolk was established by direct saponification-RPHPLC. For the optimal chromatographic conditions of RPHPLC, they were as follows: chromatographic column: Agilent Zorbax SB-C18(Φ4. 6mm×250mm); mobile phase: acetonitrile: methol: isopropanol =50: 80:10(v/v/v); UV detecting wavelength: 205nm; flow rate: 1. 3mL/min; column temperature 45°C. The contents of cholesterol from the natural red yolk of duck's egg and the common duck's egg were 24. 84mg/g and 25. 75mg/g respectively under the conditions as above.The analytical results of some fatty acids from NRYP with GC and HPLC were as follow:...
