This research was funded by the International Cooperation Grant of Jilin Province Scientific and Technology Commission; and the National Research Initiative of United States of Agriculture. The main objectives were to use low current of electricity to rapidly kill E. coli O 157:H7 and use SPR biosensor to rapidly detect Salmonella Typhimurium. The research was focus on the quality and safety of goat meat and milk.Based on what we have found from the previous studies on rapidly killing and detection of harmful bacteria around the world, we decided to use SPR biosensor to rapidly detect Salmonella Typhimurium; use low-current with thin-film of salt solution to rapidly kill E.coli.0157:H7;use a rotational spindle-type viscometer for measuring viscosities of four milk types (whole, 1% fat, 2% fat, and skim) and cream.The experimental results show that using the combination of low current electricity and thin-film salt solution could kill the E.coli.0157:H7; and also using the SPR biosensor could rapidly detect the Salmonella Typhimurium. The resistivity of goat meat and also the viscosity values of goat milk products are useful information for the related food industries.
