In order to establish a series of and measures for the prevention and control of foodborne pathogens pollution technology, and carries on the real-time monitoring of foodborne pathogens, insight into the meat from the farm to the market of the industrial chain of salmonella serotype and drug resistance changes. This topic of Guangxi Nanning supermarkets and markets of four common foodborne pathogenic bacteria pollution in meats for detection of Salmonella isolates, serotype and drug resistance analysis and comparative study from salmonella in chicken farm.STUDY1:In March2013-February2014, in Nanning four kinds of pathogenic bacteria that Salmonella,0157:H7Escherichia coli (E. coli O157:H7), Listeria monocytogenes(Lm) and Campylobacter jejunum (C.jejui) detection was determined in wet market and supermarket and4kinds of meats, beef, pork, chicken, duck were included. Research shows that the highest detection rates is Salmonella (19.35%,48/248), followed by E. coli0157:H7(5.2%,13/248), Lm(4.03%,10/248) and C.jejui(3.2%, 8/248).Salmonella isolates of48strains of serotype identification results show that the advantages serotypes are S. Derby25%(12/48),S. Newland16.7%(8/48) and S. Agona6.25%(3/48), other serotype proportion is low.STUDY2:The Salmonella detection result of chicken and chicken embryos from two large-scale fanning companies A and B in Guangxi shows:, Salmonella separation rate of chicks below21days in A company was15%(6/40), while the dead fetus separation rate was2.5%(2/80). Compared by A, the Salmonella separation rate of chicks below21days in B was3.3%(1/30), while the dead fetus separation rate was1.25%(1/80). Of16strains of Salmonella, S. Pullorum occupied68.75%(11/16), S. Typhimurium25%(4/16) while6.25%(1/16) failed to recognized, to show significantly different.STUDY3:Salmonella isolates resistance analysis found that: chicken isolates in have resistance of Trimesulf (TSU), Sulfamethoxydiazine (TMP), tetracycline (TET), amoxicillin (AMC) and streptomycin (STP) and the resistance rates are57.1%,57.1%,71.4%and57.1%respectively. And rates to ciprofloxacin, gentamicin, kanamycin, with nitrofurantoin and cephalosporin are low. Salmonella isolates in diseased, by contrast, are mainly resist Trimesulf (TSU), Nalidixic Acid (NAL), Ceftazidime (CAZ), Ampicillin (AMP), Sulfamethoxydiazine (TMP), Tetracycline (TET), Amoxicillin (AMC) and Streptomycin (STP) by93.75%,75%,43.75%,62.5%,87.5%,43.75,37.5%and43.75%. And for the rest of the several drug resistant rate is low.STUDY FOUND:Salmonella strains in meats are more complex than these in diseased chicken in serptypes. But isolates in two kinds of bacteria sources have high consistency on the resistance. They get high levels of resistance to specific antibiotics. Conclusion:on commercial meat, Salmonella pollution is most serious. And the serotypes of Salmonella from sick poultry are more complex than that from chicken samples and the isolates from different sources have high consistency on the resistance.
