As one of the most nutritious consumption foods, there are many kinds of nutrient elements people need in milk, such as fat, protein, lactose and vitamin, and so on. These nutrients can meet nutritional requirements in many aspects for human body. Therefore, the rapid detecting to content of the main constituents in milk becomes very important. In the research field of dairy detecting in recent years, with the development of science in modern analytical instrument, great attention has been given to quickly and effectively detecting the contents of the main constituents in milk.With the increasing of designing level and making level of optical instrument, the developing of data processing technology in computer, and profoundly researching of chemical metrics methods, near infrared spectral analysis technology has been developed greatly in the fields of process analysis and industrial control in recent years. It has the following advantages: highly active, fast speed, low cost, environmental protection, and simultaneous measurement for multiconstituent. It has great application prospects in such areas as monitoring in chemical industry, clinical diagnosing in medicine, mass detecting in farming industry, and quality controlling in food industry.Applying near infrared spectral analysis technology to detect the content of the main constituent in milk is of great importance in the area of dairy detecting study. This dissertation proposes an approach to adopt the near infrared spectral analysis method based on Acoustic Optical Tunable Filter (AOTF) to detect the content of the main constituents in milk, in which spectral analytical methods of extracting weak information reflecting concentration variation of sample constituents are solved.
