Along with lives level of the people enhancement, food processing industry fast development, as well as our country competitive ability about wheat in international trade market strengthens, the high quality wheat production more and more receives the widespread value. Therefore, thorough understanding the heredity rule as well as the quality effects of the wheat high quality subunits, it provides the theory basis and the science instruction for the wheat quality improvement, and further promotes our country wheat quality breeding and the high quality wheat production.In this research, 169 wheat varieties (lines) and 68 special germplasm material were selected,the Chinese spring wheat was CK, through the SDS-PAGE electricity, the high-molecular-weight glutenin subunit constitution and its the variation characteristic has been analyzed. At the same time, through 9 varieties by the double rows to match-flour experiment based on the subunits, we analyzed the change of its quality character to provide the reference for the reasonable appraisal different wheat prolamine subunits contribution to the quality. We selected 10 wheat varieties and hybridized by the complete double row, in total 45 orthogonal combinations and 9 counter-junctions combinations, and determined the SIG value of F1 grain, and researched the HMW-GS heredity rule and quality superiority combination of F1 generation. Finally, according to the HMW-GS gene sequence which be in GenBank, we designed and synthesized the special PCR primers of HMW-GS gene, and taking Triticum aestivum genome DNA as the template, distinguished the allelic gene in Glu-1 using PCR technology. Main findings in the research as follows:1. Through analysis the HMW-GS composition of 169 wheat materials, the result showed that the HMW-GS type of wheat material were quite rich, the HMW-GS type were most in Shandong Province(14 kinds), next He'nan Province (12 kinds), Anhui Province (11 kinds), Shaanxi Province (9 kinds), Jiangsu was least (6 kinds). The allelic gene variation and frequency of HMW-GS were statistic. The allelic gene variation and frequency of HMW-GS of wheat materials were big difference. The wheat varieties(lines) from Shandong Province had the superiority in 1,17+18 base, the frequency of HMW-GS was 80.00% and 3.33%, respectively; Shaanxi was the superiority in 14+15 base(15.52%);Jiangsu was the superiority in 7+8 base(60%);Anhui was the superiority in 5+10 base...
