1. It is important to detect chloramphenicol residues in food. Based on the principal and structure of ESI, the methods for detection chloramphenical in animal tissues, crawfish products, honey and royal jelly are introduced in details. Royal jelly samples should be treated by protein denaturalization; crawfish products and other fatty food of animal original , which have effect on matrices, should be extracted in SPE; common liquid extraction can meet the requirement of a great of honey samples. The LOD can reach 0.03μg/kg, LOQ is 0.1μg/kg, average recovery is stable between 100~110.0% through internal standards calibration, SD is between 6.4%~7.1%, precision in day is between 20.0~22.4%. According to EU directive 2002/657/,CCα and CCβ of the method in honey have been calculated, CCα is 0.05μg/kg, CCβ is 0.1μg/kg, which is conformity with the evaluation requirement of technical ability of EU and USA.2.The rapid methods for detection the metabolites of Nitrofurazone(SEM), Furazolidone (AOZ), Furaltadone (AMOZ) and Nitrofurantoin(AHD) in animal tissues, crawfish products, honey and royal jelly are introduced in details. At the condition of acid, metabolites of nitro furans could separate from the protein in animal tissues. By derivation of and extraction and chromatography, metabolites of nitro furans are qualified by MS, and quantified by internal standards. The average recovery of spiked samples are 98%~112% (internal calibration), LOQ is 0.1-0.2/μg/ kg, LOD reaches to 0.05-0.1μg/ kg. This established method meets the EU requirement of imported animal original products. 3. The changeable char(?)cteristics and dynamics of chloramphenicol and nitro furans in different tissues of crawfish have been analyzed, it was found that chloramphenicol change in crawfish is not conformity with any model at the level of 10μg/mL, it complies with the double model at the level of 100μg/mL .It maybe results from different concentration of drug and its stimuli degree.
