The status of residents' food consumption and nutrition, which not only has close relation to the state and local economic construction, progress of science and culture and exploitation and utilization of resources, but also is the important symbol that weighs the state or local residents' level of living and health. Good status of residents' nutrition and health is the basic for the state economic development, as well as the social important goal.During the process of national economic development, the residents' food consumption structure has been changing along with the change of income level, food supply, social development and so on these factors; at the same time the evolvement of meal structure has significant influence to the change of the residents' nutrition and health. Whether in the developed countries or the developing countries, there are existed the unreasonable problems of food consumption, which lead to the unbalance of nutrition, the unbalance of produce and sale, the waste of resources, even the shortage of resources, all of these is becoming more and more evident day by day; If we can't give these problems more attention, which will affect not only national health level, but also the sustainable development of residents' food consumption, and furthermore the political stability and the state image.In the future period, it is the important period to construct well-being society in China, also the key period to guide reasonable food produce, adjust food structure, and carry on interfering in nutrition. In the future, food development can't allow of optimism, the increase of food consumption can't reverse, the difference between the urban and rural residents' food consumption is becoming expand day by day; under the austere environment, how to strength the research and guidance on these aspects, and make these adapt to the situation and level of economic development in our country, it is a great matter that relates to which guideline and policy we will carry on for the modernization, and to success or failure of the modernization.From the statement above all, basing on the historical new period of well-being society, the research takes the theories of food consumption, balance of meal, and so on as guidance, the article develops the research on Chinese urban and rural residents' food consumption and nutrition development.Its' emphasis is that unifies qualitative and the quantitative analysis, takes the international comparison of reasonable food consumption and nutrition structure as the basis, according to the certain index and criterion, divides Chinese residents' food consumption and nutrition development course into four stages: poor stage, food and clothes (wenbao) stage, structure adjustment stage, and nutrition and health stage, researches development traits in different stages; making use of authorized food consumption and nutrition factors transformed coefficient compare and analysis the status of urban and rural residents' food consumption and nutrition development, difference existed, and the gap in reasonable structure of meal nutrition.At the same time, making the use of software SPSS, utilizing Exponential Smoothing, Trend Projection and so on thirteen ordinary models, forecast the time trend of the urban and rural residents' main food consumption and nutrition development, estimate under the absence of interfering, the urban and rural residents' food consumption and nutrition development trend in 2010,2015,2020,2030.Take all these as the basic, the article analyses the main influence factors that influence the residents' food consumption nutrition development, such as the level of economic development, food supply and social development and so on. From the conclusion in view of above, the article proposes eight policies and guidelines on improving the residents' food consumption and nutrition development in our country, in order to be sure in the new period, especially on well-being society in 2020 and the population peak time in 2040, to provide scientific gist and technical guidance for food security.
