Combined with Chinese situations, this thesis analyzes the current state and problem ofChina’s food safety risk assessment and food safety supervision by drawing on the experience ofdeveloped countries. It provides suggestions for establishing a well-structured food safetysupervision system. This study frames a Chinese food safety risk assessment system. It laysemphasis on the identification of emerging food safety risk and the model of risk assessment, whichderives a risk assessment model that applies to microorganism. By drawing on the theory of lemonmarket, this thesis investigates the phenomenon of converse selecting between food producers andconsumers which is resulted from an information asymmetry existing between these two groups inChina’s food market. This thesis concentrates on a food safety supervision system that is suitablyapplied to Chinese situations, and frames a corresponding indicator system. A final analysis willfocus on the current state of pork safety supervision. Based on the risk assessment of pork safety, asafety supervision system assumption that fits China food market will be raised.
