Grapes have pleasant flavor and aroma,and are rich in nutrients.The grape fruit,peel and seed contain important secondary metabolites,which have medical and health care values such as scavenging free radicals,delaying aging,and preventing cancer and cancer cells from spreading.Tebuconazole is a fungicide frequently used in grapes.It is not clear whether the use of tebuconazole will affect the flavor and nutritional quality of grapes.This research carried out the research on the effect of tebuconazole on the flavor quality of grapes under good agricultural practices.Based on the determination of physiological and biochemical evaluation indicators,metabonomics was used to qualitatively and quantitatively analyze these substances,evaluate the quality changes and analyze their mechanism.The main conclusions are as follows:First,the field trial of Tebuconazole in five grape varieties under good agricultural practice was carried out,and the residual level of Tebuconazole in grape fruits at harvest time was evaluated.It was found that the residual level of Tebuconazole was far lower than the MRL value to ensure the safety of fruits.Secondly,the flavor quality and nutritional components of five grape varieties in tebuconazole treatment group and control group were determined and analyzed,and the differences of the components and concentration affecting the nutritional components and flavor quality were clarified.The results showed that the use of Tebuconazole had no obvious rule on the growth indicators(single fruit weight and texture indicators).The sugar content of Jufeng increased significantly and the acid content decreased significantly,so the ratio of sugar to acid increased and the fruit flavor was strong;The content of sugar and acid components of Xiangfei varieties was extremely significantly reduced.The vitamin C content of Jufeng and Xinnongle varieties increased significantly.The content of anthocyanins in the four varieties except Xiangfei increased significantly.Third,analyze the aroma components of fruits through non-target metabonomics of volatile organic compounds.As well as the determination and analysis of major secondary metabolites by plant extensive target metabolomics.At the metabolomic level,the corresponding metabolic pathways and metabolic networks were speculated according to the changes in the amount of related metabolites.Metabolomics data show that the use of tebuconazole has an impact on phenylpropane metabolism,galactose metabolism and various amino acid metabolism.
