Pancreatic Amylase, P-AMY is a kind of α-Amylase. It can catalyze the hydrolysis of α-1, 4 polymeric glucose and play a key role in the degradation of starch and liver sugar in high animals, plants and microorganism. It is the most important digestive enzyme responsible for the injested carbohydrate.Alkaloid existing generally in the plants is a set of natural heterocyclic compound containing nitrogen, most of which has great potentials in medical application. This article, based on the extensively used in food and drug, focuses on the interactions among three small alkaloid molecules and a-Amylase by utilizing the highly developed spectral analysis methods. Theobromine, caffeine and theophylline are zanthine methylium derivates. They have the similar mother structure, but different on the number of replaced methylium and its place. These three materials function in exciting the central neuron system, heart, and skeletal muscle, as well as relaxing blood vessels, smooth muscle. It also contributes to diuresis. As a kind of alkali with significant physiological functions, theobromine, caffeine and theophylline exist in a variety of food such as the tea, coffee, cocoa/sugar and so on.This article firstly determines the activity of Pancreatic Amylase, the temperature of its highest activity and its PH value. Secondly, we qualitatively investigate the effect of these three alkalis on the enzymatic quality of Pancreatic Amylase. They all exhibit the non-competitive inhibitive functions.
