Sensory evaluation of tea is a person's sensory organs, through a certain process to determine the tea quality of tea pros and cons of a quick, easy and more accurate method of tea. However, the sensitivity of human sensory organs vulnerable to external factors, affect the assessment of the fairness of tea and accuracy. In recent years, application of sensor arrays and digital signal processing based pattern recognition methods to make sense of smell and taste fingerprint analyzer for the detection of fingerprint analysis capabilities to achieve integration, enhanced the aroma and taste of tea joint detection discriminating. Therefore, the use of electronic technology, simulation experts, visual,taste, smell sensory function, supporting evaluation of tea quality is a major trend.The subject of electronic nose and electronic tongue technology for detection of Hainan black tea, and with the traditional sensory evaluation compared to examine its relevance.And reached the following conclusions:1.Electronic nose technology can distinguish between different aroma of broken black tea Tea aroma with a low concentration to form a complex, volatile, unstable characteristics, the electronic nose sensor arrays detect the use of different samples with the sensors is based on the physical changes resulting from data processing, its sensitivity and selectivity reach ppm-ppb values.The results obtained electronic nose technology can distinguish between different broken black tea aroma.2.Electronic tongue technology can distinguish between different flavors of broken black tea Application of Electronic Tongue taste sensor array and pattern recognition method of digital signal processing, analog and biological concepts of care, achieved by the instrument "taste"an objective analysis of the product. Experimental Results:The electronic tongue technology can distinguish between different flavors of broken black tea.3.An electronic nose and electronic tongue application of technology in the tea to be further studiedElectronic nose and electronic tongue technology, its advantages include:sample pre-treatment is simple, fast, results are simple and reliable.For some components similar to or similar samples, the electronic nose and electronic tongue technical analysis has incomparable superiority of the other traditional instruments, and even can detect people's sensory evaluation is correct. At the same time new technologies, there are some issues, such as the sensor sensitivity and selectivity, appropriate data analysis methods, how to set up a complete testing of the database and so on, these problems will be more complete sensory test of tea, and can more accurately the correct evaluation of tea quality, so the electronic nose and electronic tongue in the application of technology in the tea to be studied further.
