Longan is a fruit of south China.The pulp of Longan is traditionalnourishing food in our country, which have high nutritive and medicalvalue. With scientific treat technology, a saponin was isolated from thepulp of Longan, which was identical with ginsenoside─I by chemicalanalysis,Thin-Layer Chromatography, Ultraviolet Spectrophotometry,High Performance Liquid Chromatography. This saponin was for thefirst time isolated from Longan in China.The study of Longan shell was also conducted. Flavonoides werecontained in the extracts of Longan shell based on UltravioletSpectrophotometry(UV) and chemical evidences,which explainedwhy Longan shell was processed into health protection tea byFilipino.Longan stone contain 70% starch,the experiment of production ofsingle-cell protein were carried out from hydrolysate of Longan stone.The optimum medium obtained through a half-replicate experimentare as follows: The concentration of hydrolysate of Longan stone 3%,Urea 0.4%, MgSO4'7H2O 0.05% and KH2PO4 0.l2%, PH5.5-6.0.l0.95g/l biomass concentration were obtained at l80rpm,28C for24hours. Results suggests that it has large potential aPplied value touse Longan stone as a new cheaP raw material for the production ofsingle-cell protein.
