In the paper traditional cooking and liquefaction process of ethanol materials was substituted by extrusion process of maize without germ. Process parameters of the extrusion procedure were researched. It can be reduced the cost of producing alcohol , and increased the ethanol yield.First, with the content of saccharified reducing sugar as evaluation index, extrusion parameters were studied with the experimental method of the quadratic orthogonal rotating combinatorial design of four factors and five levels. The optimum parameters of extrusion system are as follows: diameter of die nozzle is (?)1 1mm , extrusion temperature Th170X2moisture of material W~130/c~ speed of screw n160 r.p.m.Second, saccharification process was studied using extrudate of maize without germ at the levels of optimum extrusion parameters. The method of orthogonal test design was used to quali1~ the ratio of stuff and waler, the additive quantity of carbohydrase and saccharii~ng time. The optimum parameters of saccharificalion process were obtained. Saccharifying solution with 9.64% of reducing sugar can be obtained at the levels of the parameters.Yeast was added to the saccharifying solution for alcohol fermentation. The optimum parameters of fermentation process were obtained by the experimental method of the quadratic orthogonal rotating combinatorial design : principal fermentation temperature is 30t, additive quantity of potassium dihydrogen phosphate is 02%, and urea 0.2%. Extrudate of the maize without germ was fermented in the process and the alcohol yield of 56.3% was obtained in 48 hours. The production period of alcohol was shortened.Cooking and liquefaction process of alcohol stuff was substituted by extrusion process. Its principle was studied by the determination of gelanization of extrudate of maize without germ. Yeast-growth was observed in the extrudate solution , and yeast-growth curve was plotted.The curve can be applied to control the alcohol fermentation process in the extrudate solution.Graduate student: Ye XiangkuMajor.
