Curdlan has been found widespread commercial uses. a serial of treatment has been done to the initial strain Agrobacterium cradiabacter ( As. 1.150 )to breed a new mutant L-16.This paper describes the screening process and the pilot experiments in which curdlan was produced by fermentation of saccharose, this pilot plant evaluation was undertaken to find suitable operating conditions for the process on a commercial scale. It was conducted only in laboratory. Best results were obtained in media contained the following composition : saccharose 4%, nitrogen source 0.03% , MgSO4 ?7H20 0.1%,KH2PO4 0.15%,growth element 0.002% , ZnC12 0.001%, FeSO4?H20 0.003%, adjective element 0.00 1% , CaCQ3 0.3% , PH was 7.5 . The shaking speed was 120 r.p.m .Process temperature was kept as 30 t .Some conditions such as incubation which influencing fermentation were studied. To prove that the raised polysaccharide is curdlan, a series of experiments were done to study the nature of this polysaccharide.
