Lycopene is an important carotenoid and has several physiological functions. Lycopene also is a potential functional natural colorant. Lycopene is a carotenoid with a unique structure that consists of a long chain of conjugated double bonds, longer than in any other carotenoid, this configuration is responsible for Lycopene's ability to inactivate free radicals and to accelerate connection and conduction among cells and to prevent and repel cancer.In this experiment, lycopene was extracted from tomato by organic solvent. The process of lycopene extraction could be divided into extracting stage and purification stage. The rough extracting technology of lycopene was studied. First, the beforehand method of tomato was given. Then we studied the effects of some single factors such as extracting time, extracting temperature, pH, extracting number of times, agitation, solvent amount, metalions, oxidant, reducing agent and light on the extraction of lycopene. The experiment results show that lycopene is rather stabilization on oxidizer and reducer and quite instability on light. Extracting temperature and pH are the important complication on extraction of lycopene. At last, we chose extracting time, extracting temperature, pH, solvent amount as positive complications. The more efficient extracting solvent and optimum technology conditions were determined by L9(34) orthogonal experiments using acetone, hexane and chloroform as extracting solvent. The experiment results showed that acetone is more efficient as extracting solvent than chloroform and hexane. The efficient extracting conditions were 10ml acetone/1 g tomato power, 45癈, pH6.0, 3h. Among above factors, pH affects the extraction most and solvent amount affects the extraction least. In the last, we made the primary technical design on extraction of lycopene.The purification technology of lycopene was studied initially. Saponification and columniation layer analyse were used to sublimate lycopene oleoresin. First, lycopene oleoresin was prepared from rough extract of lycopene by vacuum distillation. Then lycopene crystals were prepared bysaponification on lycopene oleoresin; in the other hand, we wash and duff lycopene oleoresin many times by using many different sorbents, then, we can gain the crystals contains 7.5% lycopene using columniation layer analyse. The related theory of adsorptive isotherm was studied about columniation layer analyse in the last of thesis.
