Tremella fuciformis polysaccharide is a kind of valuable bioactive metabolite. It can improve the immunity of organism and induce the production of interferon. Therefore, eating tremella fuciformis frequently can prevent and cure many of diseases including cancer, remarkably.In this paper, raw material, tremella fuciformis cultivated in basswoods, was from Tongjiang, Sichuan province. Experimental study and mathematics returns to the equation were used. The rough content of tremella fuciformis polysaccharide extracts, gained under different conditions including neutral, acidic, alkaline and enzyme-added, has been measured. By comparison, both the processing parameters for industrial production and the mathematics relation between the content of tremella fuciformis polysaccharide and viscosity of its extract have been confirmed. Based on rheology theory of food, factors affecting viscosity of its extract such as density, temperature, heating, acid, alkali, shearing strength, additional cane sugar and NaCl, have been discussed qualitatively. The main research works and obtained conclusions are as follows:1) Temperature and time have significant influence on the extraction of tremella fuciformis polysaccharide. The addition of acid and alkali is disadvantageous to extract. Tremella fuciformis polysaccharide extract gained under enzyme-added condition has strong fragrance, tremella fuciformis polysaccharide suspending in it.The better technical conditions are as follows: a ratio of quality of distilled water to dry tremella fuciformis sub-entity of 20:1, pH value of 7.0,temperature degree of 80 癈, water bath time of constant temperature of 6h, extract times of 3. Extracting under enzyme-added condition would help the dissolution of fragrant material of tremella fuciformis.2)There exists some linear relation between the viscosity( ℃) of tremella fuciformis extract obtained under neutral condition and the content(y) of tremella fuciformis polysaccharide in it within some temperature and time.
