This study used the ow price and broken Tremella fuciformis as raw material to extraction of Tremella fuciformis polysaccharide, and production of fuciformis beverage, to provide a new health drink. The research study on extraction Tremella fuciformis polysaccharide by high-pressure cooking method and High Pulsed Electric Field method, the key technologies of Tremella fuciformis beverage processing.The main results of the research were as follows:1. Using high-pressure cooking technology to extract Tremella fuciformis polysaccharide, on the basis of single-factor experiments, the orthogonal test was used for the optimization process,take the extraction rate of assessment indicators to study the effect of different conditions for fungus polysaccharide extraction rate. The results showed that: when a high pressure time 50 min, pressure 0.06 MPa, liquid ratio 80:1, particle size 60 mesh, white Tremella fuciformis polysaccharides extraction rate(26.34 ± 0.11)%.2. In Tremella fuciformis polysaccharide extraction rate assessment indicators, by single factor experiment and orthogonal experiment to study liquid ratio, the electric field intensity, pulse number, extraction times on the extraction rate of Tremella fuciformis polysaccharide. The results showed that: when liquid ratio 50:1, the electric field strength 20 kV / cm, pulse number 10, the number of extraction 1, in this condition Tremella extraction rate(35.64 ± 0.45) %, the extraction rate was significantly higher than pressure cooking extraction of Tremella fuciformis polysaccharides.3. After the two were used by the best technology for the fungus powder was extracted by ethanol alcohol precipitation, Sevage Removal of protein, too Tremella fuciformis polysaccharides. Using High Pulsed Electric Field assisted by hot water extraction process fungus extract raw materials, based on a single factor to sensory evaluation and assessment criteria for the stability of the product, through orthogonal experiment, the optimal production process optimization Tremella fuciformis beverage. The results show that: the amount of 0.10% citric acid, white Tremella fuciformis polysaccharides extract the added amount of 30%, 3% milk added, the amount of compound stabilizer added 0.05%, cotton, sugar added amount of 8%. Tremella fuciformis milk drinks homogeneous, unique milky flavor, taste and smooth, good stability, but also has fungus nutritional function.
