Ginger (Zingiber Officinale Rose) is not only a kind of old-line flavoring but also a traditional Chinese medicine. Besides the active substances such as Zingiberen and gingerol, it has proteins, saccharides, vitamins and trace elements. Ginger is regarded as a economic vegetable which is nutritious, flavoring and functional. The thesis is about the extraction and purification of ginger essential oil aiming at acquiring ginger product with high-content Zingiberen. SDE, supercritical fluid CO2 extraction and Silica gel Column Chromatogram Purification were used. High-quality products were acquired with micro-encapsulation technology. For getting safety and highly purified ginger essential oil, the various procedure effects on the extraction and purification were studied and the best procedure parameters were acquired. The result is:1. The methods of quantity-determination and quality-determination of Zingiberen with GC and GC/MS were established. 97 of the 127 compounds in separating ginger essential oil were identified with GC/MS.2. The differences of two extraction methods were studied. The parameters having effect on SDE include particle's diameter, whether immersed and added salt, distillation time and temperature and the material to water ratio. Taking the ginger powder without salt and immersion as the material, by orthogonal experiment, the optimistic combination is: the diameter of ginger powder 0.3mm, extraction time 4h, material to water ratio 1:50. The content of Zingiberen reached 20195ul/1. At the meantime, SFE technology was studied, the parameters are particle's diameter, the pressure, temperature and time of extraction. Taking the ginger powder of 0.3mm as material, by orthogonal experiment, regarding the extraction rate as the index, the optimistic combination is: extraction time 80min, extraction temperature 35℃, and extraction pressure 15MPa. The extraction rate reached 1.97%; regarding the content of Zingiberen as the index, the optimistic combination is: extraction temperature 30℃, extraction time 60min, and extraction pressure 25MPa.The concentration reached10560ul/l. The conclusion was drawn that the ginger essential oil extracted by SDE was highly pure but was poorly gotten while the product by SFE has little oleoresin besides ginger essential oil and was better produced. Further purification by Silica gel Column Chromatogram was used.3.100~200 silica gel being filling material, the column was eluted with hexane, the ginger essential oil extracted by SFE was purified. The method could purify the four main compounds, which have Zingiberen most effectively.4. The micro-encapsulation technology was studied. Ginger essential oil extracted by SDE being the material, the parameters of producing stable micro-capsulation were established by orthogonal experiment: acacia gum being shell material , ginger essential oil 20%(V/W) being core material, emulsification temperature 30℃. Light yellow micro-capsule powder with the diameter of 5~8um is acquired and easy to melt.
