The structures and functions of water clusters have been one of the hottest points in modern science recently. It may be a very favorable method to deeply uncover the natures of questions in the fields such as chemistry, chenmical mass transfer and life sciences. In this paper, we describe the general situation of study and investigation on water cluster in decade years firstly, and outline four methods in changing the structure of water clusters, including external electric field, external magnetic field, laser radiation and heating methods. The mechanism of these four methods are also explained in detail.Because of the important roles of water in chemical mass transfer and drug release. We set out to investigate the effections of structural changed water clusters on mass transfer and drug release.First, the structure of water clusters are affected by external magnetic field and far infrared ray, and the structural changes are certified through its infrared spectrum, electric conductivity, viscosity and surface tension.Second, the extraction system composed of acetic acid, water and carbon tetrachloride is selected. Acetic acid is extracted from carbon tetrachloride by structural changed water as extractant, and the dissolve and diffuse abilities are remarkably enhanced as a result.Third, salicylic acid is selected as a model drug to disguss the effections of structural changed water clusters on drug release, and it is discovered during the experiments that the total release amount and release velocity are improved to different degrees.Fourth, a theoretical model about drug release is set up, and the kinetics equations derived from experimental data are in good accordance with model equations.
