Anoxia widely exists in the life and work of man. With the development of economy, the researches on anoxia are more and more attached important in many fields, such as physic, military affairs, gymnasium, spaceflight, dive working, travel and so on. Because anoxia can bring many pathological processes, and has effects on physiological function and physical metabolism of man, so it issignificant to research on antianoxia foods for preventing and remeding anoxia.Maximum yields of mycelium and schizophyllan in flasks were 15.10g/L and 1.00g/L respectively by submerged culture of Schizophyllum commune. The effects of different aeration rates on yield of mycelium and production of exopolysaccharide were studied. Results showed that the oxygen transfer rate in the fermentor could be effectively controlled by changing aeration rate in different time during the fermentation process, carbon source could be quickly utilized and the production of exopolysaccharide was increased. Maximum yields of mycelium and schizophyllan in 7-L fermentor were 14.83g/L and 2.12g/L, respectively. The effects of different rotate speeds on yield of mycelium and production of exopolysaccharide were also studied. When rotate speed was 200r/min, yield of mycelium was the highest, which was 15.45g/L. While rotate speed was 100r/min, yield of exopolysaccharide was the highest, which was 1.66g/L.VB1, NAA, oleic acid could promote mycelium growth and polysaccharide formation. The optimum concentration was respectively 0.5mg/L, 0.2mg/L, 0.1%.The yield of mycelium was 10.91g/L with V1 fermentation in a 500-L fermentor. The result basically matched up to that of lab. Finally the functional food had been made from the extract of V1, and it would be prepared to do body-experiment to test if it had hypoxia-tolerant effect.Technology and condition to prepare oxidation starch was studied. According to the orthogonal experiment, the optimum technology to produce the Oxidation Starch with good digestibility had been confirmed. It was maintained at dosage of NaClO of 3%, time of 2 hours, temperature of 30C and pH of 10. It was found that the correlation between content of the carboxyl and digestibility was positive in some extent by reseach.In the paper, V1, Schizophyllum commune, Monascus rubber, Rhicoppus oryzae were chosen for preparing of samples, with which the animal test had been done using distilled water, functional food 981 as contrast. The result of animal test showed tempeh and metabolite of V1, Schizophyllum commune hadremarkable hypoxia-tolerant effect. Broth of S.commune in which polysaccharide of S.commune was possibly the effective component had been proved to have hypoxia-tolerant effect again. The effect of polysaccharide was relative to its construction. So a conclusion could be drawed, if a polysaccharide had the main chain of -(1 - 3) sclerotan, it would have the effect of antianoxia. Hypoxia-tolerant effect of tempeh may be the results of many function factors , and the effective components were expected to be researched in detail.
