Study On The Extraction And Purification Of Cowberry Pigment And Its Stability

In order to comprehensive bilberry sorse, The physical and chemical properties of the pigmentincluding microwave, ultrasonic, solubly,phtostabity, thetrmostability,resistangce to sore, salt ,combustion and reduction,and the effect of medium pH value on absorptivity of pigment solution weersrudied.The result showed:1. bilberry pigment is solvable in water,and it color exhbit slight red similar jewel.2.The maxima] wave train of the pigment in water in people'seye is 514nm.3.In the stability of bilberry pigment, The favosrable environment of remaining pigment's stabilization is low temperature and avoid sun .The effect on pigment is slight under 60℃.The pH is three point five of this pigmentAs a result ,it is steady when the pH change from three to six. The ability of resistance to combustion and reduction is poor.Antiseptic as C6H5COONa is steady to the pigment in the extent of rule use. Na+ ,Cu2+,Zn2+ ,Ca2+ is stead to the pigment,but Fe3+ ,Fe2+ ,Mg2+have bigger effect on the pigment.
