PUFAs (polyunsaturated fatty acids) are essential dietary constituents. They display some special physiological functions in many aspects. PUFAs often exist in deep sea fish oil and some kinds of plants and animals. Because suffering the conditional influence in climate, producing areas, the content is unstable.And it is hard to suffice the humans requirements. But the production of PUFAs using fermentation of Microorganism is not restrained with the raw materials.To isolate a higher productive mutant fungus of PUFAs, we used Co60 as a mutanting agent.Mortierella isabellina was used as the original strain. Through morphological observation,and other index,selection of the mutant strain was conducted. Thus, we obtained a mutant strain 2W15-2W2-22.The amount of the fungi was 12.5 g(dry) per litre of fermented Liquid. The oil yield was 51.85%, containing 8.5% of γ-linolenic acid and 3.2% of ARA . The physical and chemical properties of the oil were analyzed. All of this trials may help us to enhance the ability of Mortierella isabellina to produce higher quantity of PUFAs.
