The Study Of Bifidobacterium Microcapsules Technique

In this paper, bifidobacterium microcapsules technique was studied detailedly, and culture system of bifidobacterium, count method, freeze-dry protectant, micro-capsulation as so on were discussed concretely. The results as follow:Milk matrix can be used for base matrix system of bifidobacterium culture of industrial production economically and nutritiously. But, PTYG matrix, used for count and save matrix, has the merits of nicety and celerity.One the basis of predecessor's count method of bifidobacterium and considering the anaerobic character of it, the bi-layer matrix flat count method was invented. The method aiming at the character of overly-sensitivity to oxygen of bifidobacterium, laying a layer of matrix on the basis matrix for isolation of oxygen, accelerate the bifidobnacterium growth and promote the accuracy of count.All kinds of protectants were studied under the freeze-dry condition and four types of protectants, which have good effect, were screened out. The four protectants were mixed together forming the multiplex-protectant which can promotes the survival probability of bifidobnacterium on the process of freeze-dry greatly.Two kinds of micro-capsulations were compared, and the enteric and grastic acid experiments were carried out. The micro-capsule formed from gelatin-arabic gum have merits of good shape and high productivity. The capsulation rate and productivity have been evaluated on the process of micro-capsulation.The manufacture technics of bifidobacterium micro-capsulation have been invented with above-mentioned studies.
