Chitosan; one of the biocompatible natural polymers obtained from the crabs and shrimps find a widely application in various aspects. In this paper, chitosan-iodide was prepared by chemical treatment of chitosan with potatium iodide. The prepared product was characterized by FT/IR, UV-Vis spectrometric methods. The results indicated that chitosan-iodide was formed by the reaction between ammo group in chitosan and iodide through the formation of simple iodide salt in the acidic solution. The solubility of the prepared products was greatly improved, which greatly reduced the limitation of applications of chitosan derivatives in various aspects due to the low solubility. Anti-bacterial experiments were carried out using the prepared chitosan-iodide. The results show that chitosan-iodide is much more effectively destroys normal bacterial than potassium iodide and iodine.Quantitative analytical methods of iodide in the products were performed using chemical and potentiometri titration methods. Also, optic reaction conditions were also evaluated for the preparation of chitosan iodide. The studyposed the potential application of chitosan-iodide for the food industry, heath supplements and other medical purposes.
