The existence of metal ions has directly effect on the quality of apple juice concentrate of our country, Because the metal ions can combine with poly phenol in apple juice, and can accelerate to the combination of poly phenol and protein, becoming the steady complex compound and producing sediment and increasing the turbidity of juice; and the metal ion can also promote the nonenzymatic browning of juice, and can debase the color of the fruit juice. With more and more attention being paid to juice quality and food safety, the content of metal ions in apple juice will be more strictly demand. Furthermore, some heavy metal ions for a long time a small amount of absorption will bury the potential safety hidden trouble for somebody. So, it is very important to study on exist as, change disciplinarian, influence causation of metal ions in apple juice and how to effectively remove them for ensuring the nutrition and safety, that is the key of improving fruit juice quality , increasing the export quantum of fruit juice and improving the added value of fruit juice.In this paper, four main contents were studied. First, the determination of metal ions in apple juice concentrate by ICP-AES was confirmed, and analyzed of the relativity. Secondly, the influence of main unit operations on metal ions in juice processing and the dynamic changes of metal ions in wholly juice processing chain and in entirely processing season were studied. Thirdly, the influence of metal ions on the quality of apple juice concentrate was studied, including different storing temperature, different sorting metal ions and different the concentrate of metal ions. Finally, the effects of the irradiation dose, adsorption temperature and amount of chelating fiber on removing metal ions from apple juice concentrate was analyzed.Through studies, the conclusions are as follows:1 .The content of trace metal elements in apple juice ,were detected by ICP ,when analysis of spectral line is respectively Cd2+ (228.802nm),Pb2+ (220. 353nm),Cu2+ (324.754nm) ,Zn2+ (213.856nm) ,Fe3+ (259.940nm) ,As2+ (189.042ntn), RF power is 1150W,nebulizer pressure is 25 PSI, and sample uptake rate is 1.85mL/min, the recovery of added...
