In this paper, the application of HACCP in the apple juice concentrate establishment was studied. After establishing the HACCP system for Lakeside Juice Company, the validity of this system to control critical hazards was tested.The SSOP for the apple juice concentrate product was established. From the results of the following experiments, it showed that SSOP can control the sanitation of environment and employers effectively and efficiently.Hazard analysis for the apple juice concentrate product based on experiments and associated codex was conducted, and the critical control points were identified. They are the receiving of the apple, which can control the hazards of pesticide residue and heavy metals, the selecting of the apple, controlling the hazard of patulin, and the last pasteurization, which can control food borne microorganisms. And the HACCP plan was established in terms of the CCPs.Attempts had been made to compare the safety of products before and after the implementation of HACCP system. The results showed that food borne microorganisms were lower and the products were more eligible after the implementation of HACCP system. And HACCP was a good method to improve the safety of the fruit and vegetable juice products.
