| Taking the Golden Delicious apple as the research material, this researchoptimized the optimum technological parameters of extracting conditions ofAP, discussed the optimum conditions for macroreticular purification of AP,then made a comparative study on their anti-oxidation and color-protectioneffects, and further proved their bacteria-inhibition effects on S.aureus andE.coli by means of Micro-calorimetric method, in the hope of providingelementary data and theoretical bases for the improvement and actualapplication and development of AP extracting technology. The conclusions ofthis research were as follows:1. Ethanol could act as the favorable extracting solvent for AP; the optimumextracting technological conditions were 35 minutes of time length, 58℃oftemperature, 65% of the ethanol and 4 to 1 of the solvent-dissolved matterratio respectively. The yield of extraction was 4.87g/kgDM.2. Different resins performed differently in adsorbing AP; and AB-8 was themost appropriate in separating and purifying of AP among the three chosenmacroreticular resins.When the concentration of AP was 1.68 mg/mL, 80%ethanol used as eluent at the speed of 1.0 mL/min, the purity of AP couldreach the height of 48.67%, which was approximately 60 times higher thanthe previous 0.824%, the yield of AP could reach 56.28%.3. The puried AP determined by HPLC, result showed that the chlorogenicacid content was the highest which took up 85% of the polyphenols material,followed by quercetin at 0.7833% and p-Hydroxybenzoic acid at 0.3302%.Others such as protocatechuic acid, gallic acid, chrysin and kaempferol werelow in content.4. AP acted well in anti-oxidation and refreshing on vegetable oil, far betterthan BHT. Both AP and BHT effected prominently in bringing down theoxidizing speed and extending the preservation period of the lard, but in thelater period of preservation BHT performed better.5.
