Salmonella spp. are a kind of food born pathogen that often cause humandiseases. They are abroad in the nature and can live in the intestines of manykinds of animal. Among these animals, poultry seems to have a higher ratio.China is famous for its chicken. And the export of chicken products takes alarge proportion of all chicken products. Because of the Salmonella spp.contamination, our chicken export is limited. This research studied the growthof Salmonella sp. in difference conditions and developed growth models atdifferent temperatures in nutrient broth and chicken. We have developedinactivation/ survival models of different conditions. We detected theSalmonella contamination of the environment of the chicken plant. Usingthese models, we developed a quantitative risk analysis report, and got the riskof eating the chicken that causing disease of Salmonella spp..The results are as follows:1. This thesis studied the characteristic of Salmonella sp., and finded out the range of Salmonella sp. growth NaCl concentration, pH value and temperature;2. This thesis studied the growth trend of the Salmonella sp. at different temperatures, and developed growth models of Salmonella sp. in nutrient broth and chicken at different temperatures;3. We have developed inactivation/survival models of Salmonella sp. in different conditions;4. We have investigated the Salmonella spp. contamination of chicken processing environments;5. We studied the Salmonella sp. growth and inactivation data during the chicken breeding, produce, storage, retail and cooking with mathematic models and some investigation data, and get a statistical data of risk of Salmonella spp. disease causing by eating a serve of chicken meat;6. Aiming at the production of chicken, we propose some management measures to reduce the risk of human disease causing by eating chicken.
