Although Tender L.barbarum L is rich in many kinds of nutritious ingredients and has function of medical treatment and health protection, only few systemic study was carried out. By now, none of reports on drying process and technology of L .barbarian L were appeared in public.This experiment used different drying methods-heat-dehydration, vacuum drying, and vacuum-freezing drying-to study the drying process and technology of tender L.barbarum L and determined the best harvest period, blanching temperature, preserving green method, the dosage of preserving green agent, the premium technological condition of heat-dehydration, vacuum drying, and vacuum-freezing drying.By measuring and comparing nutrition and color in fresh sample of the tender L .barbarian L with different age of growing that had grown 3~5 d,6~15 d and 15~20 d, it was proved that the tender Lbarbarum L which has grown 6~ 15d is the best drying raw materials.By determining the activity of POD in tender Lbarbarum L under different temperatures, the results shows most POD lose its activity in the condition of T > 95 ℃, heat-dehydration t > 100 s ,preventing enzymatic browning in the process. We make sure that the premium blanching temperature is 95 ~ 100℃,and blanching time is 100~120 s. Under the conditions: blanching temperature ,95~100℃ .blanching time, 100~120 s, the four team protection agent: MgSO4(0.04%), NaHCO3(0.02%), Zn(CHCOO)2(0.04%), Na2SO3(0.02%) and CuSO4(0.02%) have been chosen .by Comparing , the effectiveness of preserving color is as follows : Zn(CHCOO2)+Na2SO3 > NaHCO3 > Zn(CHCOO)2 + CuSO4 > MgSO4.By comparative experiment, it can be concluded that the best microwave heated process is 100%,premium microwave time is 60s and blanching pH is 6.5.Optimum process and technology parameter of heat air dehydrated process parameter are: blanching temperarure,95~100 ℃; blanching time, 100~120 s;the preserving green agent were mixture solution of Zn(CHCOO)2 (0.04%) and Na2SO3 (0.02%)and drying temperature was 85 ℃.Optimum process and technology parameter of vacuum drying by L9(34) orthogonal test were as same as following: protection green-microwave by 100% microwave power in 60s ; then soakage it; the soakage solution, NaHCO3 (0.02%);the temperature of vacuum drier ,75 ℃;the maximum vacuum degree,0.08 Mpa.Optimum process and technology parameter of vacuum-freezing drying by L9(34) orthogonal test were as same as following: deepfreeze , -25℃; freeze-trap temperature , -49℃; blanching temperature, 95~100℃, blanching time,20 s. the preserving green agent were mixture solution of Zn(CHCOO)2 (0.04%) and Na2SO3 (0.02%).The result of analyzing the data of three drying means by SAS shows the methods of...
