The products adjusting blood lipid has a good market. At the present time, edicine is the major product of blood lipid, which is rather expensive and had minus effect. And product made from traditional Chinese medicinal materials is effective and has no minus effect. Therefore, in this article, Cassia seed and Pollen was used to make a new blood lipid adjusting functional food. Through the study, a new product of blood lipid adjusting capsule was developed and a novel and effective way to utilize Cassia seed and pollen was determined. Firstly, different ways of extraction were carried out. In enzyme-extraction experimental, the effects of temperature, time, enzyme amount and pH value on extraction were studied through the method combining orthogonal and supplement trials. Through the analysis of experimental data, the optimal conditions of enzyme hydrolysis are determined, i.e. enzyme amount 0.5%, temperature 55℃, time 2 hours, pH value 4.6, and the degree of extraction (DE) at these conditions is 17.05%. Similarly, the effects of temperature, time, ethanol concentration and liquid/solid ratio on extraction were studied through the method of orthogonal and supplement trials. According to the results, the optimal conditions of Microwave-Assisted Extraction (MAE) are as follow: ethanol concentration 70%, liquid/solid ratio 5∶1, temperature 60℃, time 5 minutes and the degree of extraction at these conditions is 65%. Secondly, three extraction experimental were compared to get feasible extraction method of Cassia seed. The experimental results showed that MAE has obvious superiority on max DE and extraction speed. Therefore, MAE is the optimal extraction method. To use the effective constituents of pollen fully, cell wall of pollen must be broken. The effects of temperature, time, enzyme amount, pH value on breaking effect were studied by the method combining orthogonal and supplement trials. Through the analysis of experimental data, the optimal conditions of breaking are determined, i.e. enzyme amount 3%, temperature 50℃, time 14h, pH value 4.8, and the degree of breaking (DB) at these conditions is 98%. The result showed that the enzyme-breaking way had high breaking degree and mild reaction conditions compared with the mechanical-breaking way. Based on extraction trials and breaking trial, the study of blood lipid adjusting product trial was carried out. Blood lipid adjusting capsule was made from Cassia seed and pollen. Capsule recipe was studied to achieve good sensory properties and flavor. Through the analysis of experimental data, the optimal recipe was found to be cassia seed extraction 64%, pollen 26%, microcrystalline cellulose 10%. The results showed that the product made on this recipe has good colour, taste and appearance. Finally, product was analyzed to test the amounts of flavone and anthraquinone. The results are: total flavone 2.4%, anthraquinone 3%. The results of the article provide the theoretic basis for the study of new blood lipid adjusting product and for the industrial production of functional foods.
