Lycopene is an important natural carotenoids, it has the function of various health cares, such as resisting cancer, increasing the immunity and decrepitude. As a potential functional natural colorant, more and more researches were focus on it.We addressed on the process parameters and process control of solid-liquid leaching and ultrasonical extraction in this paper. The results are as follows:The stability of lycopene was studied. The result showed that temperature influence the stability of lycopene and lycopene was stable in weak acid alkaline condition. Lycopene was sensitive to sunlight, especially UV. However, it is not so sensitive to lamplight. The stability of lycopene is reduced when Fe~3+ or Cu~2+ is added to its medium whereas other metal ions have no such effect on its stability.The methods including solid-liquid and ultrasonical extraction have been utilized to gain crude product from dry tomato powder. The factors such as temperature , time , ratio of liquid to solid will affect the recovery of lycopene extraction .When using acetone as extracting solvent, the best process parameters of solid-liquid leaching are temperature 45 °C ,time 3h , ratio of liquid to solid 45:1 , it could get a recovery of 77. 50% . And a 83. 31% recovery could get when 1g tomato powder was added to 30ml n-Hexance at the condition of ultrasonic power 70w run 20 min ,then extraction 40 min at room temperature . According to above data ,it could be concluded that ultrasonical extraction could be a suitable method in industrial production of lycopene for it high efficiency and recovery.
