Panicum Miliaceum L(PML) is a traditional plant in China, whichhas plenty of proteins,fat acid and dietary fibre etc..In this thesis,wemeasured content of protein, fat acid and dietary fibre in PML,Water Holding Capacity,the Expanding Rate of PML weremeasured..In vitro digestibility of PML, compared with rice and oatslice, was also carried out.With the Micro-Kjeldahl Method,we obtained the protein contentis 14.22%(w/w) for PML,13.28%(w/w),for Oat slice, 7.96%(w/w)for Rice. The total fat acid content of PML is 3.27% .After enzymetreatment, we got the total Dietary Fibre of PML is 6.62%(w/w),inwhich the insoluble Dietary Fibre is 6.13%(w/w) , the soluble DietaryFibre is 0.49%(w/w). The Water Holding Capacity is 3.85 for PML,2.65 for Oat slice and 1.53 for Rice;The Expanding Rate of PML,Oat slice and Rice is 2.78,1.60 and 1.38,respectively.In addition,westudied the in vitro digestibility of PML with pepsin andtrypsin ,compared with oat slice and rice .The mono-factor analysis showsthat the best pepsin concentration and optimum time in hydrolyzingpanicum was respectively 2.3% and 9 h (37℃, pH 2.0) .Under theseconditions ,the panicum's protein digestibility with pepsin was68.67% ,the oat slice's was 76.98%,and the rice's was 88.96%.
