The kinds and change rules has measured and analysisd at the surface of chilled meat during selling process, microbiology growth model has built and the shelf life of chilled meat can be predicted using computer emulation.The paper has accomplished research on the elementary pattern ofmicroflora, growthrull of main microflora in different temperature on chilled meat of Shung Hui during sailing.The purpose was to confirm the objective microorganism in growth predictive model. Through experimenting about growing of primary microorganisms on chilled meat of the shelf in different temperature,we get the data.Depend on it,the primary and secondary models are developed.The better mathematic models are chosen from statistical analysis.Finally,The third that is applied software are completed.As the recommended possibility temperature range during the selling process,there were three different temperatures that is 4℃, 7℃, 12℃ determined to establish growth predictive models, primary model of sum bacteria in chilled meat's nonlinear regression is developed at these three temperatures.The results showed that Gompertz model is much more simulated the observed data than Logistic model and line model at 4℃, 7℃.However, there were no much difference between these three models at 12℃,this mainly because the sum of bacteria reach to peak value at three days later at 12℃ and the quantity of data cann't be accepted enough using days as the unit of count. Therefore,It's hard to find which model is more better. Using hours as the unit of count problems can be sloved. Gompared the value of R~2 and RSS in lactobacillus and Pseudomonas primary model,the same result can be reached. In a conclusion,the effect of simulation of Gompertz model was better correspondingly. Gompertz model has been testified as the most available model with 100% acceptance by t test and 78% acceptance by F test.The experiment compared the data by simulated with that by observed, in order to validating the effectiveness of models.
