Due to its biological characteristics of different types of microbial differences,metabolism,metabolism rate and using of meat ingredients are different. As a result to produce different metabolism offspring,different hours and types of decay.To control the initial amount and prolong the shelf life availablely,the kinds and change rules has measured and analysesed at the surface of chilled meat during storing process,microbiology growth model has built and the shelf life of chilled meat can be predicted using computer emulation.The Chilled Meat surface microbial was detected and PCR-DGGE analysis methods established in refrigerated storage period of the composition of microflora,then Microbial Technology Forecast through its shelf life for forecasting.Firstly,the basic distribution of chilled meat surface microbial and the flora advantages at different temperatures growth pattern were analysised.According to the Food Microbial Standard and the selective culture medium,preliminary understanding the surface microbial composition and volume changes of chilled meat.It's to provide supporting data to molecular biology methods.For the further prediction model development and chilled meat production to the determination of HACCP,to reach product quality controled finally.The kinds and changes has been studied by polymerase chain reaction-denaturing gradient gel electrophoresis(PCR-DGGE).The muscle was tray-packaged at 4℃during 8 days.The whole genome of mixed microbes in chilled meat was extracted by three methods,produced different DNA concentration and hallmark,the result of PCR M-maker DL2000,cell-disruption efficacy,steps,time and cost.extracted by the method acetone-chloroform was the best.Primers were used to amplify the V3 region of the bacterial 16SrDNA gene.DGGE,a new technique,was used to analyze the products.Ten types of bacteria were identified,including Photobacteriutn sp.,Brochothrix sp.,Enterococcus sp.,Pseudomonas sp.,Vibrio sp.,Acinetobacillus sp.,Aeromonas sp.,Janthinobacterium sp.,Moraxella sp.,Burkholderia sp..The results of the present study might be useful to study the changes of the contaminating bacteria and their characteristics in chilled pork. Using microbial test results to amendment and suppliment the "chilled meat supermarket early warning system" database software microbial The experiment compared the data by simulated with that by observed,in order to validating the effectiveness of models.The results showed that the Gompertz model was chosen in primary model.Compared the experimented data and experienced data of square root model in second model.The results showed that these two kind of data were consistent each other.Therefore,microbial growth U in different temperature can be predicted through square root model in second model and microbial growth can be known.
