The rate of the people who infect with the digesting system cancer is obviouslyincreasing in our country in the last few years. According to the many scholars' research,thisphenomenon is not separating with taking in excessively nitrate and nitrite. Most of nitrateand nitrite that the human body absorb mostly come from the daily ediblevegetables.,specially leaf vegetables.In this paper,it explained the compositions,sources and dangerous of nitrate and nitrite inthe vegetables , showed the mechanism of nitrate and nitrite accumulation,the influencefactor , controlling measure in the vegetables on the literature investigation and studyfoundation. This body of article researchs nitrate and nitrite content in the common leafvegetables under the different storing condition, It provides a reliable basis in how to choosethe vegetables in the daily life ,how to eat vegetables scienceficl and how to store thevegetables .First, contrasts five kind decolorization method of vegetables samples, we know"Erlenmeyer flask activated charcoal adsorption" is good to vegetables sample decolorization,moreover the nitrate returns-ratio is high.We use the decolorization method for this research.Second, through nitrate and nitrite content examination of representative leafvegetables,we know the nitrate and nitrite content of leaf vegetables are all high in thenortheast in winter and spring market in our country.The small colza and Rape have alreadyachieved the degree that the people can not eat. The celery and spinach content also achievedthe level of mild pollution. But nitrate and nitrite of the cabbage which stores in winter arelow. So the people should choose to eat the vegetables that it has few nitrate and nitrite in thedaily life.Third, this research discoveries in the fresh vegetables in the depositing process, nitrateand nitrite content increase with the storing temperature. Nitrate and nitrite content also hasthe difference with the storing way, the approximate rule is: packed in bags in the roomtemperature > the room temperature condition > refrigerator depositing > the refrigerator bagputs.So we should eat fresh vegetables as possibly.If we must store,we can store in the lowtemperature(for example refrigerator). Nitrate and nitrite change rule has had the obviouschange in the vegetables juice. The nitrate content is reduces gradually, but the nitrite contentis increases gradually in the storing process. Nitrate and nitrite content change of thevegetable is not big in the different storing .But the nitrite of vegetable soup is also high inaluminum pot from the data. In the vegetable soup we add the sodium chloride and no sodiumchloride in the vegetable soup, the nitrate content influence also very big.So we eat up afterthe vegetables product as soon as possible. We do not store it long time.Finally, this paper also contrast joins the antiscorbutic acid in the fresh vegetables juice,We discover nitrate and nitrite growth scope obviously reduces . After we eat the vegetableswhich contained nitrate and nitrite , We may eat fruits which contained Vitamin C.
