Stress relaxation characteristic properties testing system of sugar beet was designed ,which is based on rheological theories and methods. By testing the stress properties of sugar beet's stress relaxation characteristics in the condition of same load velocity, the results show that compression depth influences the stress relaxation characteristics chiefly, greater the compression depth is, the stress is stronger, stress relaxation range is larger, and the relax time is longer. The rate of relaxation was mainly affected by the interface, the interface is smaller, and the plasticity distortion changes more easily. Under the same experimental condition (compression depth and probe diameter), the sugar beet's relaxation rate was not influenced by the differentia of its inner factors. The parameters of rheological properties of experimental model, including E,ηand T, can reflect sugar beet's physical characteristics and direct the crafting process of making sugar. The analysis of rheological parameters is original foundation of studying and designing machine or equipment. As the guidance to explore and find new designing principle, it can provide the optimum parameters for producing and designing.
