The bitter melon (Momodica charanitia L.), a kind of health foods, was used as the raw material to develop a kind of functional beverage, which could drop the blood sugar value.The content and result of the study:The Study focused on the process of beverage and its anti-diabetes function. The study also focused on the main functional component (mormodicoside). The method of detection of mormodicoside in bitter melon was established. Extracted the active components with ethanol, degrease with oil aether, extracted with n-Butanol, deposited with acetone and got the coarse mormodicoside. The absorption wavelength is 552nm. Standard equation is A=0.021C-0.0329,R=0.9990. The method provided basis for developing the beverage. Study on the process of extraction and the optimized condition: 70% ethanol for extraction,ratio of solid and liquid is 1:8,Refluence time is 5h .The technological methods and optimal combination ratio were studied in the present paper, involving protection of natural color, elimination of bitter taste, mixtion and stability of the beverage. By single factor trial and orthogonal test, we optimized the processing techniques: Using 100mg/kg Zinc gluconate and 0.1% Calcium hydroxide as the color protection agent, burned in 80℃for 2min. The natural green color of material can be protected effectively. Adding mormodicoside to the fresh juice as the enhancing agent. Using 1.25% sea alginic acid sodium as the embedment agent, combined with alveolus-solidification bath, the method can embed the bitter component, using 8% xylitol, 0.3%β-cyclod- extrin, 15% juice and 10% capsule to make up the beverage, maintained the scene that bitter melon contained. Using 0.15% xanthan gum, 0.2% agar, 0.05% carboxy-methylcellulose sodium enhances the stability of beverage.We studied the anti-diabetes function of bitter melon. Alloxan was used to induce the mouse suffer from high blood sugar symptom, the mouse with blood sugar value between 10 to 20mmol/L can be used in the trial.
