The lotus root is a kind of vegetable with hollow inside, containing high rate of water and starch. Because the lotus root quality is tender as well as frail and the shape is irregular, there will be lots of difficulties while being cut into slices and the slice of lotus root being sticked on the blade. In allusion to the present condition of the low lotus root mechanization slice technique, mainly staying around the artificial to cut into slices in our country, the lotus root material characteristic was investigated in this paper. And a new kind of lotus roots slice machine was designed at the foundation of analyzing the domestic and international food slice processing technology, combining its material characteristic, and the function of the machine was tested and optimized.In this paper, the shape and size of the lotus root were stated and analyzed, including the scope of the node length and node diameter of lotus roots and the difference of the nodes in different position. In addition, the physics machine function of the lotus root were tested and analyzed, including the surface anti- that includes the lotus root presses the strength and shears to slice the strength, anti- curved strength and squeeze the strength as well as the mechanism of the machine damnification of lotus roots in using the TA- XT2i quality analysis instrument and WDW30005 electronics all-powerful experimental machine. Four kinds of slice projects which were suitable for lotus roots slicing were put forward combining the lotus roots material characteristic. And the four settings were selected in using mistiness value method. And the device with be partial to place the crank slippery type lotus root slice organization was chosen for the best performance organization. Aiming at to slice to pare an easy and sticky knife, easy and broken up characteristics, the author studied to slice the reasonable structure of the knife and slice to pare the way, and designed the wind force type to tidy up to fall to anticipate the device. In the end, the part function of slice machine were studied in adopting the single factor to experiment and just hand over to experiment the method for combine together at the lotus roots slicing device studied. And the best combine parameter about the working speed, the slicing-knife shape, thickness of knife,numbers of holding-lotus root the pressure pressed by affixture were fixed on. The rate of fragment was not more than 5%, the level of gravamen was not more than 8% at the condition of the best parameter combination.
