This article study different parts of nutrients of lotus root,the change of nutrition new and old lotus root,and the study of processing products,to further increase the content of lotus root growth rule database,to improve the variety and processing technology of lotus root products,to provide theoretical basis and reference for the new product development of lotus root.The results were as follows:(1)Nutritional characteristics of different parts of lotus root.In different parts of lotus root,the characteristics material was different.The water content: the center of lotus root<the bark of lotus root < rhizoma nelumbinis,and dry matter content: the center of lotus root > the bark of lotus root > rhizoma nelumbinis,the dry matter content in the center of lotus root is 19.4%.The center of lotus root contains a lot of carbohydrates,Starch accounts for 85% of carbohydrates;the characteristic substance contained in the bark of lotus root was polyphenols,it content is 143.23?g/g;and the rhizoma nelumbinis was flavonoids,and fat content than other parts.(2)Accumulation and transformation of nutrients in the growth of lotus root.The carbohydrate and protein content of breeding lotus root was higher at 20 day,and the fat and water content increased at 80 day.In the course of shrinking,the nutrient substance is mainly composed of carbohydrate and protein,which is mainly composed of water and carbohydrate and fat.Changes of nutrients in new lotus root: fresh weight,dry matter,carbohydrate,protein,total flavonoids content of Lotus root reached the peak at 60 day,this time is the best period for picking and eating of the new lotus root.At 80 day,starch,fat,total phenols and organic acid content of Lotus root reached the maximum,other substances tend to smooth,this is the best period for the digging of the old lotus root.In the lotus root,amino acid analysis showed that the maximum content of asparagine was 0.31%,followed by lysine was 0.23%,glutamic acid 0.19%,serine 0.14%,proline at least 0.01%.(3)Development of instant Candied lotus root,Strips of flavor lotus root and lotus root biscuit with lotus root as raw material,the results are as follows: Instant Candied lotus root prepared by Elian 5,Optimum technological parameter: the concentration of citric acid 0.3%,cooking time 8min,sugar concentration 35%,impregnation time 12 h,Instant Candied lotus root prepared by Elian 6,Optimum technological parameter: the concentration of citric acid 0.2%,cooking time 4min,sugar concentration 30%,impregnation time 12h;Strips of flavor lotus root,Optimum technological parameter: the concentration of citric acid 0.2%,the concentration of sodium chloride was about 3%,the amount of compound powder was 0.8%,and the boiling time was 6min;Lotus root biscuit,Optimum technological parameter: the starch of lotus root was 30%,the white powder of sugar was 20%,corn oil was 30%,compound loose agent was 1.0%.
