Using corn starch as main raw material, acetic anhydrade and potassium trimetaphosphate as modifying agents , the reaction conditions of esterification and cross-linking of starch have been tested in experiments.Complex starch esters is synthesized by combination of esterification and cross-linking on suitable conditions.Effects of complex modification is investigated by analyzing physical and chemical properties and structure of maize starch acetate, distarch phosphates, complex starch esters,furthermore testing its practicality in actual application.Effects of amounts of modifying agents,pH,temperature and time on esterification and cross-linking of corn starch is investigated by using acetyl contents of resultant starch acetates and sediment volume as indexes.Based on orthogonal experiments, the optimum conditions were resulted as follows: amounts of acetic anhydrade 10%,pH9.0,temperature30℃ and time1h for esterification reaction;and amounts of potassium trimetaphosphate 1.0%,pH10.0,temperature 50 ℃ and time2h for cross-linking reaction.Based on review of esterification and cross-linking reactions,we studied the preparation of complex esterified starch by continual reactions in one-step synthesis way,moreover,analysed physical and chemical properties and structure of products in the experiments.According to the application inquirements of similar food additives,we did application experiments in imitated processing of noodles,confiture and beverages.Research results indicate that one-step synthesis way of complex starch esters is more simple and acceptable, and that complex starch esters improve and strengthen the character of corn starch, having dual qualities of starch acetate and distarch phosphates and versatility of thickening, stability and emulsification in food additives, therefore, it should be one of safe, polyfunctional food additives and more suitable for uses in some food process.
