In this paper, chemical method, Raman spectra, X-ray diffraction method and MALLS were used to compare physical & chemical properties and structures of tapioca starches, potato starches, canna starches and other starches in Fujian province at first, in order to establish intact database and make good use of plant starches. Then, the relationship between reaction conditions and the carboxyl and carbonyl content was investigated by the selection of catalysts and the study of catalytic oxidation. Oxidized starches with high carboxyl and carbonyl content but low viscosity were prepared by catalytic oxidation. GPC-MALLS and other advanced methods were used first time to analyze the component and structure of catalytic oxidized tapioca starches and to determine the effect of catalytic oxidation on the structure of tapioca starch and its adhesive properties. Finally, above results were applied to prepare starch adhesive and the best prepared condition was established. It was meaningful to the preparation of starch adhesive with low cost but strong adhesive strength and fast drying speed.
