It has been found that sucralose has the sweetnest and the best physicochemical character in all of chlorodeoxy derivative of sucrose. It has very pure sweetness and physicochemical properties which both are very similar to sucrose. The foreground of study and application of sucralose is very amplitude, and the market of sucralose is also very abroad.The article is to study the feasible way to synthesize sucralose on the view of industrialization. After studying kinds of synthesis methods of high intensity sweetener sucralose, in this thesis we mostly study as follows:1. Developing a synthetic route for preparation of sucralose, which contain reacting sucrose with dibutyltin oxide or trimethyl orthoacetate to product sucrose-6-ester, then chlorinating the sucrose-6-ester using SOCl2/pyridine to produce sucralose-6-ester, finally deacylating the acetyl of the sucralose-6-ester to produce sucralose. The total yield of sucralose was 19.54%.2. The study is particular discussing the best conditions of each step of reaction. The reuse of the reagent could reduce the cost of synthesis.3. The course of the reaction is confirmed by TLC. We confirmed the structure of the production by using infrared spectrum and MS. The production we synthesized is very close to standard swatch.
