Nowadays, researching lycopene as a functional food is a hotspot in the international academic world. Lycopene performs significant sanitarian functions in many aspects, such as defending and resisting cancer, enhancing the immune ability and slowering the aging rapidity. Tomato is fruitful in our country. More than 90% of tomato is used to making ketchup, and hence lots of peel residue appears. Therefore, the research to resolve the problem of the deep process of tomato, especially to develop the lycopene with high additional value is of importance and valuable.In this issue, peel residue is used as the material to extract lycopene by using SCFE. This paper mainly investigate solvent pre-process,enzyme on extraction, as well as the stability of lycopene in the extraction, are considered in this experiment. Theoretical analyse and the result of experiment indicate that:Dry material is more effective than wet material. Oxygen and crumbling plays an important role to maintain the stability of lycopene in material. light and room temperature affect the stability of lycopene, but the effect is not conspicuous. Storing the material is advised under the dry condition, low temperature, no light, no crumbling and vacuum. The remanet is 92.1%, if the lycopene has been stored one month under these conditions.Temperature plays an important role in affecting the stability of lycopene, but the effect is not conspicuous when the temperature is lower than 40°C. Visible light makes little impact on the stability of lycopene, while invisible light, such as UV and IR, makes large influence on it. Na( I ) and Mg(II) makes little impact on the stability of lycopene, whereas Al (III) and Fe( II) makes large influence on it, and Cu(II) and Fe (III) makes the most influence on it. 6 hours after adding, lycopene almost consumes completely. Acid plays an important role in damaging the stability of lycopene, while the damaging degree caused by alkali is little.Alcohol manage has a large influence on extacting of wet material, while crumble manage impact conspicuously on extracting of dry material. No mildew is more effective than mildew.Using petroleum-aether as solvent to extract lycopene from dry and crumbled material is the best method: ratio of solid-liquid was 1:6, extraction time was 2h, temperature was 30°C, times were 3, The impact from main to minor is:times > atio of solid-liquid> extraction time> temperature. Using the way of solvent pre-process extract before SCFE, the extraction rate is 97.8%, and the purified degree is up to 14.7%.
