Jujube Dates is the fruit of Zizyphus jujube mill plant of Rhamnaceae. Taihangshan Zizyphus Jujube Dates belong to the dried jujube which rich in nutrients and has some healthcare effects. Taihangshan Zizyphus Jujube Dates include sugar 33.01%, acid 0.53%, Vitamin C 427.27mg/100g, tannic acid 467.47mg/100g, added to this it also contain kinds of vitamin, amino acid, crude fat and micro element. Taihangshan Zizyphus Jujube Dates is commercial growing in Xingtang Hebei, as the cultivated area of Taihangshan Zizyphus Jujube Dates in Xingtang country is more than 55 myriad mou. It is statisized that the output of Taihangshan Zizyphus Jujube Dates is 6000 kilogram and output values has reached up to 1.5 million Yuan per year.The pomegranate supplied by Shijiazhuang Forest Bureau. The aim of the present study is to solve the problem that the output of Taihangshan Zizyphus Jujube Dates was reduced because of encountering continuous overcast and rainy in producing area during fruit harvest. The Taihangshan Zizyphus Jujube Dates is used as raw materials in this study for the local condition. The test studies a series of technologies such as: study on the impact of solar drying and drying room on the yield and quality of the products; study on the effect of blanching and microwave on the quality of the products, especially in inhibiting enzymatic browning; study on the variation regularity of nutrient content (reducing sugar, total sugar, total acid, tannin acid, Vitamin C) which is changed in the process of drying; study on the relation of the loading of disk and the quality of dried dates; study on the relation of the drying level and the quality of dried dates. The study will play an important role in improving drying technology, enhancing the economic and ecological benefits.The main results were as follows:1 Taihangshan Zizyphus Jujube Dates include water 62.30%, acid 0.53%, reducing sugar 14.84%, total sugar 33.01%, Vitamin C 427.27mg/100g, tannic acid 467.47mg/100g, PPO 0.319U, POD 0.234U。2 The yield of quality fresh dates with drying room is higher 5.4% than with solar drying. The inferior fresh dates is over 12.57%. The rate of good dates obviously improves, the dried quality fresh dates can increase 5.4%.3 The dates is cleaned twice with cleaning water. The better method is that cleaned with cleaning water twice.4 The best treatment is that the dates is treated by the water boiling in 3 minutes before drying.5 Considering the retention rate of nutrients and the color of the products during the drying process, the best drying mode is the horizontal heating mode.6 In this article, the effect of different loading on quality of drying date was studied. The best loading on drying of the dates is 12.Skg/m2 by determining the nutrient content(reducing sugar, total sugar, total acid, tannin acid, Vitamin C) for the dried dates, which is dried by different loading.7 The drying room could be dehumidified when the relative humidity is up to 70%, which is the best condition of ventilation and humidity exhaustion, then closed the system when the relative humidity drop to 60%.8 The best drying level is to 80%, in this way, the products have fullness shape and fleshy pulp, and it will improve the rate of dates.9 Nitrogen-filled plastic packaging is an effective packaging and storing way to ensure the quality of commodities dried dates.10 Dried dates include water 27.53%, acid 1.12%, reducing sugar 59.39%, total sugar 67.80%, Vitamin C 32.25mg/100g, tannic acid 730.03mg/100g.
