The homogenizing techniques is essential in the standard process in modern dairy industry. The research of homogenization process in foreign country is earlier than our country. The major use of homogenizing is able to diminish the diameter of the fat globule and the nutritional intake of people with milk is better. Also it can strengthen the stabilization of products and prevent the fat rising during selling the product. In recent years because our milk yield is less than the market requisition, some of large dairy factory introduced into set of equipment from foreign countries in order to increasing the yield. Setting kinds of process parameters was according to affording by the equipment manufacturers without amending the parameters in terms of our country milk source. With the pressure of product cost and prolong the shelf life, this foreign-parameter problem must appear. So we must absorb the introduced equipment technique and turn it into our technique in terms of our country instance. Then we will set a set of suitable designing parameters to our dairy processing.The papers is major research of the homogenizing techniques in the liquid milk industry. The research aspects is as follows:一,the relation between the temperature and the pressure of homogenization: when we set the homogenization process, the homo temperature is relative to the homo pressure. Through the test, the ideal setting parameter is 65℃/200bar.二,optimizing the pure milk homo parameters with different machines: we compared the pure milk homo efficiency with different machines by different equipment manufacturer.三,optimizing the upstream and downstream homo process in producing different kinds of product in the UHT producing line: We have optimized the upstream and downstream homo in terms of different product formula. We must consider the design of process when we produce some of products. It is not ideal with downstream homo when we produce the product containing the particles.四,the practical application compare between the new homo equipment and piston homogenizer: the papers debate the homo efficiency of new homo emulsified equipment and traditional equipment. During designing the whole factory, we must choose the suitable equipment in terms of different equipment and different processes in order to optimizing process capability and economy through the combination different process. We have achieved some useful conclusion and instructed the practical produce.The papers have some methods to judge the homo efficiency, the main methods as follows:一,Setting method: it is major to setting the products produced by UHT in room temperature and observing the stable extent of products.二,Holding-speedup test: observing the stable extent of products through putting the products into high temperature and speeding up destroying its stable system.三,Particle distribution test: observing and measuring the proportion of particle size when the products is through the laser diffraction.四,Particle concentration analyses: because the result of Mastersizer can reflect the relative concentration of different particles, it can't reflect particle distribution in the real state such as 1% fat content and 10% fat content maybe can measure the similar particle distribution curve, but in fact the same particles /unit of 10% fat content sample are many more than those of 1% fat content sample. So we induce into the concentration idea. The concentration represents the relative particle distribution with different fat content system.
