Pathogenic microbial contamination was one of the main factors of influencing our country pork product quality and safety, but currently the country still have questions that the main pathogenic microbial contamination of present situation background is unclear and risk assessment work is hysteresis in the pork products. This research combines the method of field investigation and the laboratory detection, investigates pathogenic microbial contamination influence factors and the influencing factors of our country pork products, simultaneously carrys out risk assessment to pathogenic microbial contamination of pork products according to"Principles and guidelines for the conduct of microbiological risk assessment"instituted by Codex Alimentarius Commission, intend to find out the present situation of pathogenic microbial contamination of pork products in China and establish international risk assessment model about quality and sasety of pork products.1. Through the field investigation on hygiene condition of swine nursery, the slaughter processing enterprise and the market environmental pork products, finding out the current influencing factors are mode of raising pig production, processing tools of slaughter, the flushing water, plant environment, operator's personal hygiene, refrigeration temperature and time, transport means, sale environmental sanitation and the operator's personal hygiene health and so on.2. According to the requirement of pork microbion index, examination of 180 pork sample drawings from partial provinces and cities, detecting total numbers of colony, coliform group, salmonella, enterohemorrhagic Escherichia coli O157:H7, The result indicated that enterohemorrhagic Escherichia coli O157:H7 were not detected from pork samples, the total numbers of colony conforms to the national non-environmental damage pork standard, but the majority of sample detection value were higher, they were situated between 103 and 105..The number of coliform group positive samples were 60, it accounted for 33.33% of the total samples. The number of salmonella positive samples were 28, it accounted for 15.56% of the total samples. These indicated that the intestinal tract microbial population contamination was serious in the production processing and the sales process, pork products hygienic quality was seriously influenced by salmonella contamination.3. According to correlative data collected in the investigation, had a systematic research to chinese pork products pathogenic microbial contamination risk from aspects on hazard identification, hazard characterization, exposure assessment and risk characterization, proposed a risk assessment model of salmonella.
