The soluble characteristic of alcohol denatured soybean protein (ASP) and effect on it that brought by different treatment were studied in this paper. The soluble behavior rule of ASP which at transition state was analysed in order to provide referrence for modifications and applications of alcohol washed soybean protein concentrates. The change of ASP's solubility that brought by different treatment was compared. The relatively molecular weight distribution of ASP's solute in different temperature was also determined in order to judge the mode of intermolecular force and causation of changing. We determined the activating energy of dissolving to research the change rate of dissolving initial phase. Determination of the surface hydrophobicity index could offer the difference of ASP's surface texture after treated for us. The result indicated that: the high-speed cut, alkali and limited enzymolysis treatment could make the solubility of ASP increase in a different degree, while acid treatment made it decrease. When ASP was treated by heat, the solubility showed a trend that descended first to rose behind. Under the same dissolve temperature, high-speed cut treatment made the dissolve amount of protein aggregates reduce gradually, while the amount of primary protein molecular increased. When ASP was treated by heat, the soluble aggregates showed a trend that descended after increasing first, and attained the biggest value at 15 min or so. As the acid treatment pH descended, at normal temperature, the amount of ASP's aggregates decreased gradually, while alkali treatment was contrary with it. After treated by limited enzymolysis, protein aggregates almost couldn't be found, but the amount of protein molecular increased. The high-speed cut, alkali and limited enzymolysis treatment played down the activating energy of dissolving of ASP. Heat-treated caused it descend first and increase after, and acid processing was contrary with it. After treated by high-speed cut and alkali, the surface hydrophobicity of ASP increased, and limited enzymolysis treatment played the contrary action, while the surface hydrophobicity of ASP showed us a trend that increased first and descended after.
